调料:白醋、糖、料酒、番茄沙司或着番茄酱、盐、味精、水淀粉

1、将鱼洗净撒干水分,在鱼头下部切一刀、鱼尾部同样,抽出鱼腥线。Z&?!jM lT,j

2、鱼身改刀,切瓦块片。从鱼肉最厚的背鳍下刀,尽量不要切到鱼肚子,不然过油炸制的时候容易断开。J,CX&?o(Pw'G

3、鱼身撒少许盐、料酒,腌渍20分钟。然后用鸡蛋一只、水淀粉、面粉适量,调成糊。使鱼身全部沾满芡糊,然后在扑一层干粉。xUy6l C)bV

4、锅内放油,要以没过鱼身为准。烧至6成热,手提鱼尾,用炒勺将油淋至鱼身,等外皮基本定性后,再将鱼放入锅内炸至熟捞出。开大火等油温升高后复炸一下,装盘备用。
